Curried Sprouted Bean Salad

This delicious, protein rich sprouted bean salad is as good for you as it is delicious.

You can serve it as a side dish with another protein to replace higher sugar potatoes or rice or eat as a Vegan meal on it ’s own. It is perfect as a luncheon dish and packs easily to take to work or school. I have noticed that my Sprouted Bean Salad is also super popular at dinner parties no matter what the season.

Ingredients:

2 c. Organic Sprouted Bean Trio mix (truRoots organic is a good brand)
2/3 c. chopped parsley
2/3 c. peeled and diced fresh cucumber
¼ c. sliced scallions or green onion
8 tbsp extra virgin olive oil or Optomega (organic mix of Omega 3 vegan oils)
4 tbsp fresh lemon juice
1 tsp ground cumin
¼ tsp ground pepper
Organic Sea Salt to taste
Sprouted Sunflower sprouts

Cook the sprouted Bean Trio as per package directions. Drain and cool to room temperature. Combine the beans with parsley, cucumber, green onions, olive oil, lemons juice, cumin and mix well in a large bowl. Toss well.

Makes 8 servings. Yum!
