Mediterranean Omelet

This Mediterranean Omelet is perfect for a Mothers Day Breakfast or Brunch. Quick and easy to make, gluten free and so tasty.

To make an omelette for 2 people you will need the following


4 eggs beaten

1/4 cup water

sea salt and black pepper to taste

1 tsp extra virgin Olive Oil

1 tomato sliced

1/8 cup of fresh Basil, sliced thin

5 medallion  slices of Bocconcini fresh cheese

2 tablespoons fresh grated Parmesan cheese



Whisk 4 eggs and water in a small bowl. Add pepper and salt.

In a skillet heat olive oil and pour in egg mixture.  Cover with a lid under omelet is almost cooked. Place Bocconcini cheese around 1/2 the omelet and layer the tomatoes on top. Cover with fresh basil then top with fresh Parmesan cheese.

Flip other half of omelet on top and let cook for 1 minute.

Slide onto serving plate and cup in half.

Serve with homemade baby roast potatoes if desired
