I love salmon. It is so good for you and full of the Omega 3 essential fatty acids that we all need.
This recipe began as an “old family recipe” that I loved. Over the years I have been experimenting with it and have come up with, what I believe is the best salmon you will ever eat; plus it is super easy to prepare. This recipe feeds approx four people.
½ salmon filleted
½ c. light mayonnaise
¼ c. Dijon mustard (smooth or grainy)
Juice of 1/2 a lemon
¼ red onion chopped fine
½ tsp dill (dried)
Pepper and Montreal Steak spice to taste
Preset the oven for 425 degrees
Line a baking pan with Aluminum foil or parchment paper and place salmon on it, skin side down.
Mix the mayonaise, Dijon mustard and lemon juice together.
Spread the mixture on top of the salmon like an icing.
Sprinkle the chopped onion evenly and then grind black pepper to your taste.
A final dusting with Montreal Steak spice really brings out the flavour.
Once the oven is at 425 degrees, back the salmon for 18 minutes (no more, no less) and let sit for a few minutes before you serve. Voila! You and your lucky family and or guests will be in for a West Coast treat.
