Almond Flour Christmas Cookies
2 cups almond flour
1/4 cup coconut oil (or dairy-free butter substitute), softened
1/4 cup maple syrup or honey
1 teaspoon vanilla extract
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
Optional: Dairy-free dark or white chocolate chips, chopped nuts, or dried fruits for topping
Preheat your oven to 350°F (175°C).
Prepare the Dough:
In a mixing bowl, combine almond flour, softened coconut oil (or dairy-free butter), maple syrup (or honey), vanilla extract, baking soda, salt, and cinnamon.
Mix well until a dough forms. If the dough is too soft, you can refrigerate it for about 15-30 minutes to firm up.
Shape the Cookies:
Take tablespoons of dough and roll them into balls. Place them on a baking sheet lined with parchment paper, leaving space between each cookie.
Flatten each ball with your palm or a fork to create the cookie shape. If desired, press in some dairy-free chocolate chips, nuts, or dried fruits on top.
