
A couple of weeks ago I was looking for some healthy recipe ideas for the Christmas Season and I discovered a protein rich and gluten free flour made from Almonds.
These lemon scones taste so delicious, they shouldn’t be good for you but-they are!! This might become a new Christmas morning favourite in your home too!
Almond Flour Lemon Scones (Gluten-Free, protein rich)
Preheat oven to 350 degrees
Dry ingredients
- 2 cups blanched almond flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon sea salt
- Lemon zest from a whole lemon
Wet ingredients
- 1 large egg, beaten
- 2 tbsp lemon juice
- 1 tablespoon raw honey
- Optional-add 1/3 c. blueberries, raspberries or cranberries for extra zing!
Method
Preheat the oven to 350°F. In a large mixing bowl, blend all the dry ingredients together. In a small mixing bowl, loosely mix the wet ingredients together. Mix the wet ingredients into the dry ingredients with a large spoon, then scrunch up in your hands to ensure the dough is uniform. Roll dough into a one inch thick circle, and cut into 8 triangle shaped pieces. Line a baking sheet with parchment paper and place each scone triangle on it with enough room to spread. Bake for 10-12 minutes, or until golden brown on the edges. Cool for at least 5 minutes before you serve.
Enjoy on its own or with a bit of butter on the warm scone.
