In honour of Chinese New Year 2016 (Feb 7-13th) I thought I would put together a recipe for a simple to make Asian Salad. This salad would make a terrific side dish with almost any entrée you choose to serve. Depending on how much cayenne you use this Asian salad could be mild or wildly flavoured.
This Asian Salad Serves 6-8 people
Ingredients
1 lb (4 cups) fresh bean sprouts
2 tbsp finely chopped green onions plus tops
2 tbsp tamari soy sauce (gluten free version of soy sauce)
2 tbsp sesame seeds
¼ tsp Stevia
1/2 tsp grated fresh garlic
1 tsp grated fresh ginger
Dash of cayenne pepper (more or less to taste)
Cilantro or Chinese parsley sprigs for garnish
Method
Cook sprouts in boiling, water for 2-3 minutes. Drain & chill. Combine above ingredients and chill once more. Drain and serve this Asian salad with sprigs of Cilantro.
