This Avocado Citrus Beauty Salad looks wonderful when served on a large platter but , if preferred you can cut the salad ingredients into smaller pieces & serve in your favorite salad bowl.
Makes 4-6 servings
Avocado Citrus Beauty Salad
Ingredients
Vinaigrette Dressing
- 1 tablespoon Dijon mustard
- ¼ cup fresh lemon juice
- 1 teaspoon Himalayan or sea salt
- ¾ teaspoon freshly ground black pepper
- 1/3 cup extra virgin olive oil
Salad
- 2 ripe medium to large avocados
- 1 large red grapefruit
- 2 large oranges
Method
Place the mustard, lemon juice, salt & pepper in a small bowl. Slowly whisk in the olive oil until well combined. Set aside until you are ready to assemble the salad.
To assemble: Just before serving this Avocado Citrus Beauty Salad, cut the avocados in have, remove seeds & peel. Now cut each half in 4 thick slices. Toss the avocado slices in the vinaigrette .
Using a sharp knife, peel the grapefruit & oranges. Carefully separate the grapefruit & orange segments.
