The end of summer often comes with weather that is summer’s hottest, at least that is the way it is on the West Coast. Personally, our kitchen is on the west side of the house so around 4 pm, the hot sun comes streaming in our windows making cooking in the oven quite unpleasant indeed. This list of the best late summer salads have been mainstay lunches and dinners for a few end of the summers for a few years now. I hope you enjoy making 1 or all of them during the remaining warm weeks of August and September.
Of course, any of these best late summer salads can be made in any other season as a side or lunch dish . They are all filled with superfood ingredients to give your body maximum nutrition and minimum high glycemic carbs.
Best Late Summer Salads
Summer Superfood Salad with Lemon Dijon Dressing
In this Superfood Summer Salad you will find, avocado, almonds, baby spinach, garlic & extra virgin olive oil-all superfoods! This salad, with its mouthwatering Lemon Dijon dressing dressing combines sweet & savory in each delectable bite.
The Lemon Dijon Dressing makes enough to 2 salads, unless you like your salad really well dressed. Personally, I prefer dressing to be on the lighter side but everybody’s taste preferences are unique.
Peach & Roasted Beet Salad
The combination of peaches and beets might seem an unusual one but, trust me, put together in a salad with a savory/sweet dressing makes the most delicious salad for a light meal. Try this peach & roasted beet salad for lunch but it is also hearty enough to serve for dinner on a late summer or fall evening.
Right now is a great time to buy peaches as they are at their best in August. We just bought a box from the Okanogan in British Columbia and they were soooooo good that I have been having 2 peaches for breakfast every morning.
Quinoa Salad
This fresh new quinoa salad is just the dish for easy entertaining. It is super easy to make and is a real crowd pleaser!
It also packs easily for lunches on the go or picnics.
I have served this Quinoa Salad on its own but it is really great over a bed of spinach with the garnishes I suggest below. Once this Quinoa Spring Salad is made it can be stored in the fridge for a day or two.
Classic Salad Nicoise ” with a twist”
Nothing says the end of summer time like dinner on the deck with a Mediterranean Salad Nicoise & perhaps a chilled glass of dry chardonnay (or rose, if you prefer).
Right now, our normally cool West Coast climate is having a heat wave and I cannot bring myself to cook anything in my oven for dinner.
Historically, Salad Nicoise comes from Nice. With my French heritage I am surprised that I have never put together a Classic Salad Nicoise before but the 38-40 degree Celsius weather has definitely motivated me.
Mediterranean Potato Salad
I love late spring & early summer when the weather is warm enough on the West Coast to share meals with friends & family in the outdoors. When picnic season comes around there is nothing more popular than a potato salad. Whether you are attending a potluck you can rest assured that you will be asked for this recipe once your family & friends taste it. This is the best potato salad ever!
I have given you lots of options to make this yummy salad to suit your group, no matter what their dietary preferences are.
