
Well this summer our normal prolific vegetable garden has produced double the zucchinis from past years-both green & yellow. Time to pull out all of my best zucchini recipes that I have developed and collected over the years. Most of these recipes can be found in my newest Vegetarian cookbook, Organic Goodness.
I love growing zucchinis as there are so many different types of recipes that zucchinis can be used in.- My favorites include a deliciously easy zucchini & sweet onion stir fry, zucchini lasagna , zucchini pasta carbonara, chocolate zucchini bread, lazy Sunday pasta, and my oldest zucchini creation “zucchini boats”.
After looking back in my blog best zucchini recipes I realized that I had never published this beautifully delicious way of using zucchinis. So, today I have included Zucchini Boats in this summer recipe collection of the best zucchini recipes.
If you would like to make a vegan version of this recipe, just replace the cheeses with a non dairy vegan alternative. I am suggesting using gluten free flour& bread crumbs but if no one in your family has gluten issues, feel free to use regular flour& bread crumbs.
Zucchini Boats

Ingredients![]()
- 4 small zucchini
- 1 cup crumpled Feta cheese (goat or sheep)
- 1/3 cup grated sharp white cheese (Gruyere or cheddar)
- 2 tbsp gluten free flour
- 1 Tbsp. fresh dill or 1 tsp dried dill
- 1 tsp crushed garlic (or 2 tsp crushed shallots)
- 2 Tbsp. gluten free breadcrumbs (optional)
- 1 Tbsp. butter or dairy free margarine
Method
Preheat oven for 350 degrees.
Slice zucchini in half lengthwise and scoop out the seeds. Mix the cheeses with the flour, dill, garlic and pepper. Arrange the zucchini on a baking pan (covered with foil or parchment paper), cut side up and dust with pepper. Fill with cheese mixture, sprinkle with bread crumbs (optional) and dot with butter. Roast in the oven until the zucchinis are tender and the cheese is bubbling. ( About 40 minutes) Serve immediately .
Nice accompaniments: These zucchini boats are delicious served with some homemade (or deli) tzatziki. To make it a larger meal you can add a Greek salad on the side.
