
I was at an all day nutrition and spa seminar a couple of months ago. The organizers decided to have all of us bring a pot luck dish to share over lunch (an idea I highly recommend for all day events). One lady brought these amazing and healthy brownies which everyone loved. Well I finally found the recipe and thought I would share it with my readers. Not only will these brownies be a family favourite but they are full of protein and super low in sugar. Enjoy!
Black Bean Brownies
Ingredients
1 can black beans (preferably organic and BPA free)
1⁄4 cup melted coconut oil (or melted butter)
1⁄4 cup cocoa powder
2 tsp vanilla extract
3 tbsp Stevia
A pinch of sea salt
3 lightly beaten eggs
1⁄2 cup dark chocolate drops

Directions
- Preheat oven to 350°F. Grease an 8-inch pan.
- Place the black beans, oil, cocoa, stevia, vanilla extract and salt into a blender or food processor and blend until smooth.
- Fold in the eggs and chocolate chips. Mix well.
- Pour into the pan and bake for about 20 minutes. Let cool for at least 10 minutes before cutting.
You are going to want to eat them right away!!
