
I love Black Bean burgers and Costco carries a brand that is super delicious called Morning Star Farms. My daughter and son in law are visiting from Hong Kong and I had planned to serve the Costco burgers for a quick and easy dinner one night. However, after reading the ingredients, I discovered that they were not gluten free, which many of my family members need. What to do? I researched some recipe ideas and came up with my own recipe for what I believe is a delicious moist burger that will hold its own beside any beef burger.
BLACK BEAN BURGERS
Ingredients
1 can black beans, rinsed and drained
2 cups cooked, cooled quinoa
1/2 cup shredded Tex Mex cheddar cheese ( or dairy free cheese alternative)
1/2 cup Easy Chipotle Mayonnaise*
1/4 cup gluten-free panko bread crumbs
1 medium carrot, shredded
1/4 cup chopped purple onion
3 Tbsp. chopped fresh Italian parsley
1/2 tsp. Sea salt
1/4 tsp. Ground black Pepper
Method
Cook Quinoa according to directions and set aside to cool (This can be done a day ahead.) With a fork or potato masher, mash black beans in large bowl. Stir in cooked quinoa, shredded Tex Mex cheese, Chipoltle Mayonnaise, bread crumbs, carrot,green onion, cilantro and salt.
Shape into 8 patties (about 1/2 cup each). Add 1 Tbsp Extra Virgin Olive Oil and heat over medium-high heat in a non stick pan. Add burgers and cook, turning once, until golden brown and heated through, about 10 minutes.
Top, if desired, with additional Chipotle Mayonnaise (and any other condiments desired) and serve on hamburger buns or lettuce wraps
*EASY CHIPOLTLE MAYO
Ingredients
- 1 cup light mayonnaise
- 2 tablespoons finely chopped green onions
- 2 minced garlic cloves
- 1 Tbsp fresh lime juice
- 1 teaspoon chipotle chili sauce (use more if you want it hot)
- Sea Salt and coarsely ground black pepper
Method
Stir mayonnaise with chives, garlic, lime juice, and chipotle chile sauce . You may wish to add more. Season with salt and pepper; chill until ready to serve.
