
This super simple to make broccoli salad is one of my summer staples. It is perfect at home or for a picnic because it keeps in the fridge for a few days. With all of 5 main ingredients to put together it may become one of your favorite “fast foods” on a hot day. You can serve this salad alone or use it as a base for other favorite salad vegetables like cucumber, avocado, peppers and more. Alfalfa Sprouts also make a perfect crunchy topping.
Broccoli is considered to be one of the top Super foods. Broccoli nourishes the skin, joints and connective tissue in the body to give us fluid movement. Containing Vitamin A and Vitamin C, broccoli is one of the foods that helps repair collagen and keeps our skin looking young.
Broccoli also helps keep our bones strong because it is high in calcium, magnesium and zinc. On top of this, broccoli is high in iron and folate and helps keep the body in a more alkaline state. All of this from one little plant!
Tangy Broccoli Salad
Ingredients
4 cups chopped broccoli
¼ purple onion, finely chopped
¼-1/3 cup light mayonnaise
1 tablespoon Madras curry powder (less if you don’t like too much spice)
1 Lime, juiced
Black pepper to taste
Broccoli Salad Toppings
Cucumber
Avocado
Peppers
Alfalfa Sprouts
Method
Mix all ingredients together in a large bowl. That’s it! Serve as is or top with any your favorite green salad toppings (see above for suggestions)
To serve:
Place salad in a pretty bowl & serve with vegetable toppings.
