This year, why not make a new start with some healthy desserts like this Chia Seed Pudding with a holiday flair. Whether you are entertaining yourself or attending a dinner party, you can offer this healthy but decadent dessert to appeal to the pickiest of guests.
I’ve given you options for serving that can change this dessert quite a bit so you can even serve it to the same people twice & they will not be able to tell. It’s our little secret!
Chia Seed Pudding with Mixed Berries & Almond Crumble
For Chia Seed Pudding:
1/4 cup chia seeds
1 cup almond milk (or any other dairy-free milk of your choice)
1-2 tablespoons maple syrup or honey (adjust to taste)
1/2 teaspoon vanilla extract
For Mixed Berries:
1 cup mixed berries (strawberries, blueberries, raspberries)
1 tablespoon maple syrup
For Almond Crumble:
1/2 cup almond flour
2 tablespoons coconut oil (melted)
1 tablespoon maple syrup
1/4 teaspoon cinnamon
Pinch of salt
Plain Greek Yogurt or Dairy Free Coconut Yogurt
Pomegranate Seeds for sprinkling on top
Prepare Chia Seed Pudding:
In a bowl, mix chia seeds, almond milk, maple syrup (or honey), and vanilla extract.
Stir well and let it sit in the refrigerator for at least 2 hours or overnight, allowing the chia seeds to absorb the liquid and create a pudding-like consistency.
Prepare Mixed Berries:
In a saucepan, combine the mixed berries and maple syrup.
Heat over medium heat until the berries release their juices and the mixture thickens slightly. Remove from heat and let it cool.
Prepare Almond Crumble:
In a bowl, combine almond flour, melted coconut oil, maple syrup, cinnamon, and a pinch of salt.
Mix until it forms a crumbly texture.
In serving glasses or bowls, layer the chia seed pudding, mixed berries, and almond crumble.
Garnish with extra berries and a sprinkle of almond crumble on top.
This dessert is not only delicious but also provides healthy fats from almonds, antioxidants from berries, and the nutritional benefits of chia seeds. Adjust the sweetness according to your preference, and enjoy a guilt-free treat during the festive season!
You can also add an additional layer of Greek yogurt to this Holiday pudding for additional creaminess. For dairy sensitivities you can change the layer up to one of coconut yogurt.
