Mexican Corn Chowder
Spring is an especially wonderful time to detoxify your body. I love to come up with new recipes that are so delicious that you and your family have no idea that they are clearing out toxins and boosting their immune systems.
All they know is how they are going to ask for seconds.
The other thing I enjoy is using up what I have in the house and creating a delicious meal without having to go to the store for special ingredients.
I hope you enjoy this Mexican Corn Chowder as much as I enjoyed putting the recipe together. It is quite thick and eats like a meal too!
Ingredients
1 yellow onion, chopped
3 garlic cloves, chopped
1 tbsp. extra virgin olive oil
1 can organic tomato soup
1 small can organic tomato paste
1 can chili beans (drained and washed)
1 cup vegetable or chicken broth
1 can niblets corn
½ cup sundried tomatoes
2 tsp. organic taco seasoning
1 tsp tumeric
Method
In a large Dutch oven on medium heat, sauté the onion and garlic. Add all other ingredients and cook until bubbling. Lower heat to a simmer and let cook for another 30 minutes. That’s it!
Serve for an easy lunch or as a dinner you may wish to make a pot of brown rice and serve the chowder on top. If you are wanting to drop some winter pounds I would serve with a side salad instead of the rice.
