I hope everyone had a fun and safe New Years Eve and is ready to welcome in the wonderful New Year with exciting plans for your best year yet.
At this time of the year it is so important to eat nourishing foods like chili and soup that keep our energy high and immune systems strong. So many people get colds and flu after all the Christmas celebrating , and the food we eat influences our bodies mental and physical health more than anything.
Here’s a deliciously yummy Chili soup recipe to start 2015 off on the right foot.
I love soup and I love chili so I put together a recipe that is a bit of both, with the added benefit of some wonderful detoxifying ingredients. I added black beans and garbanzo beans to make it extra hearty and protein rich. It’s also loaded with veggies to give you a delicious and super healthy winter meal. My Chili Chowder also contains no dairy, gluten or sugar to interfere with your digestion and will begin to detox your body after the Christmas celebrating.
This recipe will feed lots of people or you can freeze leftovers to take for lunches.
Detoxing Chili Chowder
Makes 8-10 servings
Ingredients
1 medium yellow onion, chopped
2 stalks celery, chopped
2 medium carrots, chopped
1 cup sliced mushrooms
1 c. chopped broccoli
1 c. chopped fresh kale
4 cloves garlic, minced (can be replaced with shallot cloves if sensitive to garlic)
1 tbsp chopped fresh ginger (leave this out if you don’t like ginger but it is a wonderful detoxifyer)
1 Tbsp ground cumin
1 Tbsp ground Turmeric
1 Tbsp Chili powder
1 chopped jalapeno or chipotle pepper (Chipotle will give a smokier flavour. Use canned or fresh but with either, remove the seeds)
2 Tbsp extra virgin Olive Oil
2 cans (19fl.oz each) black beans –drained and rinsed
1 can 19 fl oz can garbanzo beans –drained and rinsed
1 can (19 fl/oz) low sodium chicken or vegetable broth(organic if possible)
1/2 c. water
1 large can or bottle of (28 fl/oz) chopped tomatoes (buy tomatoes in a glass container if you can find them-much better for you)
Method
In a large saucepan or Dutch oven, cook and stir chopped onion, celery , carrots, mushrooms, broccoli,garlic and spices in olive oil till onion is tender, remove from heat.
Add beans, chopped tomatoes, kale and water.
Bring to boil on medium-high heat. Reduce heat to low and simmer for 15-20 minutes more , stirring occasionally. Ladle into soup bowls.
Optional:
Top with sliced avocado and chopped cilantro for enhanced flavour and some super good for you essential fatty acids.
Extra Recipe Notes:
With your spices and other ingredients, only use pure ingredients without fillers and added preservatives. A lot of chili powders and taco seasonings add extra sugar to their product.
