We are moving through winter & will soon becoming to my favorite season – Spring. Before Spring arrives, though, is one of my most treasured days of the year-Valentines Day. whether you have a “special someone” in your life or not, I believe that this “special someone” should also be yourself. So, in honor of this day to celebrate LOVE ,I am dedicating this “Inspired by Elegance” blog to Valentines Day & have created a number of easy to make recipes for a Dining In with Your Valentine experience.
Ah, Valentine’s Day – the day of love, romance, and, let’s face it, crowded restaurants with overpriced prix fixe menus. This year, why not skip the hustle and bustle of the outside world and create a magical, intimate evening right in the comfort of your own home? Dining in with your partner , friend ( or just yourself) on Valentine’s Day 2024 might just be the secret ingredient to a perfect celebration of love. Here’s some more reasons to entice you:

Dining In with Your Valentine-Main Course
Balsamic Glazed Salmon with Roasted Vegetables
2 salmon fillets
1/4 cup balsamic vinegar
2 tablespoons honey
2 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper to taste
Assorted vegetables (e.g., cherry tomatoes, asparagus, and bell peppers)
Preheat the oven to 400°F (200°C).
In a small bowl, whisk together balsamic vinegar, honey, minced garlic, thyme, salt, and pepper.
Place salmon fillets on a baking sheet lined with parchment paper. Brush the balsamic glaze over the salmon.
Toss the assorted vegetables with olive oil, salt, and pepper. Arrange them around the salmon on the baking sheet.
Roast in the oven for 15-20 minutes or until the salmon is cooked through and the vegetables are tender.
Chocolate Fondue for Two
1 cup dark chocolate, chopped
1/2 cup heavy cream (or dairy free whipped cream)
1 teaspoon vanilla extract
Assorted dippables & sides (e.g., strawberries, blueberries, banana slices, mandarin oranges, kiwi fruit , breadsticks, pretzels, cheeses. nuts etc.)
In a saucepan, heat the heavy cream until it just begins to simmer.
Pour the hot cream over the chopped chocolate in a bowl. Let it sit for a minute, then stir until smooth.
Stir in the vanilla extract.
Transfer the chocolate mixture to a fondue pot and keep warm.
Arrange the assorted dippables on a platter and enjoy dipping them into the luxurious chocolate fondue.
