
Fiesta Salad
I made this delicious salad for a family birthday party yesterday to go with our hostesses yummy Mexican casserole. This makes a very colourful & delicious salad to add a little zing to any meal. If you like fish tacos, this would be a hit as the perfect side dish. It also makes a really easy lunch to take to work or school.
Ingredients
1/3 cup fresh lime juice
1/4 cup olive oil
2 cloves garlic, minced
½ teaspoon Himalayan Pink salt
½ teaspoon freshly ground black pepper
1/8 teaspoon ground cayenne pepper
2 (15 ounce) cans black beans, rinsed and drained
1 avocado – peeled, pitted and diced
1 1/2 cups frozen corn kernels
1 each green & red bell pepper, chopped
2 tomatoes, chopped
6 green onions, thinly sliced
1/2 cup chopped fresh cilantro
¼-1 jalapeño pepper, seeds removed, finely chopped (optional for additional ZING)
Method
- Place lime juice, olive oil, garlic, salt, and cayenne pepper in a small jar. Cover with lid, and shake until ingredients are well mixed.
- In a salad bowl, combine beans, corn, avocado, bell peppers, tomatoes, green onions, jalapeño and cilantro. Shake lime dressing, and pour it over the salad. Stir salad to coat vegetables and beans with dressing, and serve.
