Ginger Garlic Chicken
Ingredients
- 1 Egg white]
- 2 tsp Cornstarch
- 2 chicken breasts, skinned & boned
- 3 tablespoons extra virgin olive oil
- 6 slices fresh ginger
- 2 finely chopped garlic cloves
- 4 medium tomatoes, chopped
- 1 1/2 cup frozen baby green peas
- ¼ tsp black pepper
- 1/4 tsp Sea Salt
Method
Beat well 1 egg white & cornstarch. Cut 2 skinned & boned chicken breast in 1-inch pieces. Stir well & refrigerate for a minimum of 30 minutes.
Cut a piece of ginger into 6 slices while removing the skin. Finely chop 2 pieces of garlic & set aside.
Chop 4 fresh tomatoes, cover with pepper and set aside.
Heat 2 tablespoons of oil and cook chicken pieces, approximately 2 minutes each side. Take out chicken & add the tomatoes, ginger & garlic. Cook, while tuning for approximately 3 minutes.
Now, add 2 cups of frozen peas. Cook, while turning for 2 minutes then add the chicken back in.
To Serve
Depending on your nutritional goals, you can serve this delicious garlic ginger chicken over rice, cauliflower rice, spaghetti squash or just on its own.
