
Is there anything nicer on a cold Winter day then a piping hot bowl of homemade soup? This amazing soup will feed up to 10 hungry people. It’s the perfect soup for a cold winter day. Hearty Hamburger Soup is Gluten & Dairy Free.
Making a pot of this soup makes your kitchen smell wonderful & freezes easily so you can enjoy hot homemade soup anytime. If you are planning a skiing trip just make up this Hearty Hamburger Soup ahead of time, freeze it & you will have an instant après ski meal by adding some crusty bread & perhaps a simple salad.
Of all the meals I make for my grandchildren, this Hearty Hamburger Soup is their # 1 favorite meal!
Hearty Hamburger Soup
Ingredients
- 1 ½ pounds lean group beef
- 1 medium-large onion, chopped
- 1 28 oz. can diced tomatoes
- 1 can sliced mushrooms with the juice
- 1 container beef stock (see Notes)
- 4 carrots chopped fine
- 3-4 celery stocks, chopped fine
- 8 tbsp. brown & wild rice
- ½ tsp thyme
- ½ tsp Italian seasoning
- ½ tsp black pepper (or to taste)
Method
In a large Dutch oven, brown the beef & onions. Once browned, drain any fat and add all other ingredients. Bring to a boil & then simmer for 2 hours. Remove the Bay leaf before serving.
Notes: If you don’t have beef stock on hand you can use 4 cups of water with 4 tsp of beef bouillon.
To Serve
Ladle, piping hot into bowls. If desired have sides of grated cheese &/or green onions for garnish
To Freeze
Allow the soup to cool then ladle into freezer containers. I suggest freezing 2 servings/container for ultimate flexibility.
