
I have had many people that have tasted my version of Caesar Salad ask me to post the recipe so here it is- just in time for the hot weather. To keep it gluten free for those who can’t tolerate gluten I usually serve the croutons on the side of the Caesar salad. This keeps the sugar count in the salad down too! For my vegan cooks I give you options too.
Caesar Salad Ingredients
Dressing
3 cloves crushed garlic
¼ cup light mayonnaise (or vegan mayo substitute)
1 tbsp Dijon mustard
1 tsp Worsteshire sauce
Juice of ½ fresh lemon
Salad
2 small heads of romaine lettuce, cleaned and chopped
¼ cup croutons of your choice (you can also make your own gluten free ones)
2 tbsp real bacon bits (use a vegan alternative if desired)
½ cup fresh parmesan cheese (or Vegan cheese substitute)
Delicious extra toppings
1 tbsp dried capers
8-12 Roasted garlic cloves (bought or easily made in a muffin tin in your oven)
Method
Earlier in the day or at least 1 hour before you serve the salad:
In a small bowl mix all the dressing ingredients and set aside.
Just before serving:
Chop the romaine into bite size pieces and place in large salad bowl. Mix in the dressing and sprinkle on the cheese, bacon bits and capers. If you want to make it extra yummy I really do suggest adding some roasted garlic cloves. They are very mild but add a special touch. Toss lightly and serve immediately!
