
You know, sometimes you just need to have a nice Italian pasta meal. This special Mediterranean Black Bean Pasta dish has triple the protein and is very low in starch and sugar.
I was mooching around Costco last week and found an amazing new pasta that is gluten free, vegan, certified organic and low in carbohydrates. Made by Explore Asian Authentic Cuisine, it has 3 times the protein content of normal pasta. Now, if you understand what pasta is made of, you will realize this is a semi impossibility but . . . let me present Mediterranean Black Bean Pasta -easy quick and so delicious
Ingredients
Sauce
1 onion , diced
2-3 cloves garlic, minced
1 pound prime lean minced beef (organic if possible)
400 g (18 oz ) tinned diced tomatoes or equivalent fresh diced tomatoes
1 can tomato sauce
¼ cup red wine
1 chopped green pepper
1 can sliced mushrooms
1 zucchini, diced
!/4 c. Goat cheese feta and/or
¼ c. fresh parmesan cheese
Fresh Basil to top
Pasta
Black bean pasta for 2, 4 or 8 (see package directions)
2 tbsp pesto sauce
Method
Cook garlic, onion and minced beef till softened add chopped green pepper, sliced mushrooms and zucchini till all is softened
Add tomatoes, red wine and tomato sauce
Bring to a boil and then simmer till sauce thickens. N
Hold on low while you cook the Black bean pasta
Meanwhile, Heat water in a large Dutch oven until boiling, add 1 tbsp extra virgin olive oil.
According to package directions add black bean pasta noodles and cook until al dente (Note: these noodles are really fine, almost like angel hair pasta, and cook in about 5 minutes max)
Remove from Dutch oven and drain. Place in a bowl and add pesto sauce.
Stir well and serve on plates with Mediterranean Sauce topped with minced Goat Feta and fresh Parmesan, if desired.
Garnish with fresh Basil leaves.
