
These Mini Appetizer Cheese Balls are a perfect addition to any party. With Spring is just around the corner and Canada opening up its Covid restrictions, I believe that many of us will want to have a small gathering to see friends who we have not seen in a long time.
I love the concept of using platters and boards for entertaining and these little Mini Appetiser Cheese Balls are actually vegan so they will appeal to all your guests. Pick your favorite crackers and fruits to accompany these little morsels or, you may prefer to make a savory board with vegetables, olives & nuts.
I like to call these mixed entertaining boards “Friendship Platters” because they are such an easy way to entertain friends.
Mini Appetizer Cheese Balls
Ingredients
4 cups raw cashews
3 lemons juiced
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon salt
½ teaspoon black pepper
2 teaspoon dried dill weed
8ounces vegan cream cheese
1/2 cup walnuts, chopped finely
½ cup of almonds, chopped finely
Method
In a medium bowl, cover the raw cashews with boiling hot water. Let them soak for 5 minutes.
Drain the cashews, and add to a food processor or heavy-duty blender, along with the lemon juice, onion powder, garlic powder, salt, pepper, and dill weed. Blend until smooth, 1-2 minutes.
Now add the vegan cream cheese, and blend it in. It should be very creamy and smooth. Taste and adjust seasonings to taste.
Place the bowl with the cheese ball mixture in the refrigerator and chill for 4-6 hours until it is fairly firm.
When ready to make the Appetizer Cheese Balls, unwrap the mixture. Using a tablespoon, scoop out the mixture and make small balls. Roll each ball gently in the chopped walnut/almond mixture until coated.
Serve on a tray with all your favorite crackers, fruits, and vegetables!
