
You know, sometimes you just need to have a nice Italian pasta meal, especially during our cold & wet winter months. This special pasta dish-Easy Pasta Bolognaise has triple the protein and is very low in starch and sugar.
Most grocery stores are carrying a variety of new kinds of pasta these days that are gluten-free, vegan, certified organic, and low in carbohydrates/high in protein.
Now, if you understand what pasta is made of, you will realize that creating a pasta that is high in protein is rare but . . . let me present Easy Pasta Bolognaise- quick and so delicious
Easy Pasta Bolognaise
Ingredients
Sauce
- 1 onion, diced
- 2-3 cloves garlic, minced
- 1 pound prime lean minced beef or vegan beef replacement (organic if possible)
- 400 g (18 oz ) tinned diced tomatoes
- 1 can tomato sauce
- ¼ cup red wine
- 1 chopped green pepper
- 1 can sliced mushrooms
- 1 zucchini, diced
- 1/4 c. Goat cheese feta and/or
- ¼ c. fresh parmesan cheese
- Fresh Basil to top
Pasta
- Black bean pasta for 2, 4, or 8 (see package directions) or choose Edamame, Corn, Quinoa, or a combination of dried pasta noodles
- 2 tbsp pesto sauce
Method
Cook garlic, onion, and minced beef till softened add chopped green pepper, sliced mushrooms, and zucchini till all is softened
Add tomatoes, red wine, and tomato sauce
Bring to a boil and then simmer till sauce thickens.
Hold on low while you cook the pasta of your choice
Meanwhile, heat water in a large Dutch oven until boiling, add 1 tbsp extra virgin olive oil.
According to package directions add pasta noodles and cook until al dente (Note: if you choose noodles that are really fine, they will cook in about 5 minutes max)
Remove from Dutch oven and drain. Place in a bowl and add pesto sauce.
Stir well and serve on plates with Mediterranean Bolognaise Sauce topped with minced Goat Feta and fresh parmesan, if desired.
Garnish with fresh basil leaves.
