
This summer why not make your own fresh salsa, instead of buying it at a store. I find that store bought fresh salsa is very expensive these days & not nearly as yummy as homemade.
This recipe for Peach Mango Salsa uses some of summer’s best local ingredients & spiced up with just the right amount of heat.
While I love regular tomato salsa to spice up a meal, using fresh peaches & mangos takes the flavor & texture to a whole other level. I highly recommend this Peach Mango Salsa as a topping for grilled chicken, shrimp or fish (fish tacos anyone?) but suggest you might also consider it for breakfast on a vegetarian omelet. Honestly, it’s the BEST!
When choosing your mangos & peaches, pick some that are just ripe, but still firm. For your tomatoes I would recommend romas, as they stay firm longer.
Feel free to increase or decrease the jalapeños, depending on your love of a bit of heat. You can also increase the mangos if you cannot find fresh peaches. I think you will enjoy this recipe. Your salsa will be a little less sweet tasting but it will still be mouthwatering.
Peach Mango Salsa
Ingredients
- 1-1/2 cups chopped fresh tomatoes
- 1 cup chopped peeled fresh peaches
- 1/2 cup chopped red onion
- 1/2 cup chopped sweet yellow pepper
- 1 1/2 cup chopped peeled mango
- 1 jalapeno pepper, seeded & minced
- 3 garlic cloves, minced
- 1 Tbsp. lime juice
- ¼ cup minced fresh cilantro
Method
In a large bowl, combine all the ingredients. Cover and refrigerate until serving, at least 10 minutes.
Serve with tortilla chips for dipping or as an accompaniment to grilled or baked chicken or fish. Also wonderful served as a topping for shrimp or fish tacos.
To Store
While any fresh salsa is best served within 10-15 minutes of making, that is not always practical, especially when you are entertaining guests. I recommend storing it in the fridge for a maximum of 3 hours to keep all the ingredients crisp. If you have leftovers after the party you can always freeze the salsa for later-really!
