
I am hooked! These Pumpkin Pancakes are absolutely delicious and provide you with a gluten free, fiber rich breakfast that is full of beta carotene and great for your digestion. You may never have a “regular old” pancake again. If you choose quinoa flour you will be helping your body break down proteins plus help detoxify your liver. Cinnamon and ginger help with blood glucose regulation plus are great for digestion. This recipe will serve 2-3 persons
Ingredients:
1 c. pureed can pumpkin-no sugar added
1 c. purified water
¼ c. maple syrup
2 large eggs (organic, if possible)
1 ½ c. of **Gluten free flour mix( or Quinoa flour)
2 tbsp *Fibergy or chia,flax seeds
2 tsp baking powder
1 tsp ground cinnamon
1 tsp fresh ginger
1 tbsp coconut oil
*Fibergy is a blend of 13 kinds soluble and insoluble fibers needed by the body. Great as an additive to smoothies, recipes and as a healthy thickener for great elimination. Purchase in the LiveWell Store under Products

Put it together:
- In a small size bowl, combine pumpkin with eggs, water and maple syrup. Whisk till frothy.
- In a medium size bowl blend together flour of choice with all other dry ingredients. Make a hole in the middle of the dry ingredients and pour in pumpkin mixture
- Mix the ingredients by hand or use a hand mixer on low
Preheat a frying pan or skillet on a medium heat and add 1 tbsp coconut oil
Pour in ¼-1/3 c. of mixture, depending on pancake size desire
Cook on a medium heat until mixture starts to bubble. At this point, flip over to other side and cook 30-60 more seconds. Once cooked, place pancakes on a plate to keep warm in a 250 degree oven
To serve:
Top with sliced bananas, chopped apples, pecans or walnuts plus
Drizzle with maple syrup. Option: add a tbsp low fat sour cream , Greek yogurt or ***Ageless Body Cream. Totally yummy!!
