
Autumn is a season of colour and abundance. I especially love all the varieties of squashes there are available to try. One of my best & most requested Fall recipes over the last 10 years has been this Roasted Squash Medley.
I have cooked different squashes a variety of ways but find that there is nothing more mouth watering than roasting individual slices.
Combining sliced squash with delicate herbs, shallots , garlic and a bit of natural sweetness really brings out even more of their delectable flavours in a roasted squash medley.
If you don’t have a herb garden, you will find that many grocery stores sell a mixture of fresh herbs in one small container which is quite a savings. If you want to do a repeat of Simon and Garfunkel’s “Scarborough Fair” (one of my all time favourite songs), you can add a garnish of fresh parsley before you serve this roasted squash medley dish!
Hint: Roasting the squash on parchment paper makes a super easy clean up too. Enjoy!
Roasted Squash Medley
Ingredients
- 1 acorn squash
- 1 white acorn squash
- 1-2 delicata squash (use 2 if they are small)
- 3 Russian garlic cloves, finely sliced
- 3 Shallots, quartered
- 1 medium apple, sliced
- 3 sprigs each, fresh rosemary, sage and thyme
- 2 TBSP real maple syrup
- ¼ cup Extra Virgin Olive Oil
- ½ tsp ground Lemon Pepper
- ½ tsp Pink Himalayan Sea Salt

Method
Preheat oven to 425 degrees and position oven racks in the lower sections of the oven. Line 2 baking sheets with parchment paper.
Halve acorn and kabocha squash lengthwise and remove seeds. Slice into ½ inch wedges. Slice delicate squash into rings and remove seeds. Slice apple into ¼ inch pieces. Peel and slice shallots and Russian garlic. Place squash, apple, shallot slices evenly into the two pans and sprinkle with garlic slices.
Next drizzle with olive oil and maple syrup and grind Lemon Pepper and Pink Salt.
Place sprigs of herbs evenly on top and roast about 45 minutes. Squash should be fork tender. Just before serving , top with fresh parsley if desired.
