This yummy shrimp dip was given a healthy low glycemic overhaul and brought to an “appie” party to celebrate my birthday. Everybody loved it! Try it for your next party-no one will know it has had a healthy overhaul!
It is possible to make this shrimp dip recipe dairy-free as well by substituting a Vegan cream cheese, Vegan greek yogurt, and Vegan Mozzarella. Vegan versions of dairy ingredients have come so far in the last couple of years.
Now, for those of you who love Shrimp as I do, I have added some of my requested Shrimp recipes underneath the recipes. I think you will find that these additions are really easy to put together for a quick meal any night of the week.
Skinny Shrimp Dip
Ingredients
- 8 oz Cream Cheese (regular or light can be used)
- 1/2 cup Greek Yogurt
- 6 oz Broken shrimp
- 1 cup Seafood sauce (recipe below)
- 1 cup Mozzarella cheese, finely shredded
- 1 Yellow pepper, chopped
- 2 Roma tomatoes, diced
- 3 Green onions, diced
- Parsley to garnish
Method
Mix cream cheese and greek yogurt with a hand mixer until smooth and spread on the bottom of a 12-inch plate (a pie plate works well!). Spread the seafood sauce over the cream cheese mixture followed by the shrimp, then the mozzarella ending with the chopped vegetables. Garnish with some chopped parsley and chill before serving.
This recipe is low glycemic and gluten-free. It is also Dairy-free with the substitutions I suggest above.
Serve with a variety of cut raw vegetables or your favorite whole grain cracker. For gluten-free serve with gluten-free crackers of choice.
