
As the temperatures rise in summer it is always nice to serve a signature cooling drink for your guests. Watermelon is super hydrating, high in vitamins and has a very calorie count & low glycemic load. This makes this Sparking Watermelon Spritzer the ideal summer cocktail for summer entertaining.
Once you make and try this sparkling watermelon spritzer I’m sure you will want to make it often for yourself this summer. Why wait for guests?
Here is a little known fact (at least it’s news to me). Did you know that both Canada & the U.S. has a National Watermelon Day? That’s right, this fruit is so popular it has its own National Holiday!

Note: Make sure you buy a seedless watermelon for this recipe or you will have seeds floating around in your spritzer, which would be weird! Also see my notes at the bottom of the recipe for an adult version for cocktail hour.
Makes 8-10 servings

Sparkling Watermelon Spritzer
Ingredients
- 2 TBSP granulated Stevia
- 2 large oranges, juiced
- 8 cups of seedless watermelon, cubed
- ½ cup of fresh mint leaves
- 6 cups cold sparkling water (plain, not flavoured)
- Extra orange and/or watermelon wedges plus extra mint leaves
Method
In a small bowl, stir together Stevia & Orange juice. In a blender pulse together have the orange juice mixer, half the cubed watermelon and half the mint leaves until smooth. Strain this through a mesh sieve into a large pitcher. Repeat the same process with the other ingredients. Refrigerate until cold. At this point you can store the mixture for up to a day and finish off when ready to serve.
When ready to serve stir in the cold sparkling water and garnish with watermelon/orange wedges & extra mint leave to make a beautiful presentation.
Note: If you would like an alcoholic cocktail, simply add 1.5 ounces of Vodka per serving just before you add the sparkling water.
