
Easy, delicious . smokin’ good fiber
Canadian Super Bowl is just around the corner and in order to help you celebrate this fun event with friends I have but together a SUPER Chile recipe that you can serve in a BOWL (PUN definitely intended)! Super Bowl Chipotle Chile is little bit sweet plus the wonderful addition of a whole chipotle-smokin! Gotta love all the fiber your will be getting!.
Ingredients and Method
1 can black beans
1 can Garbanzo Beans
2 cans washed kidney beans…never put them in unwashed…creates gas (and not what you put in your car)
1 can of nib lets corn
1 can of tomato sauce
1 can of diced tomatoes
1 large onion, diced and fried in 1 tbsp olive oil with
1 diced green peppers –and
2 diced stocks of celery
Optional vegie additions: 1/2 c. diced carrots and 1/2 peas
½ lb to 1lb of cooked lean ground beef, ground chicken or turkey…for a Vegan chili replace with 1 package of cubed Firm Tofu. Add 2 tbsp Chile powder to your choice of protein while it is frying
3-5 tbsp of BBQ sauce…I use Cattle Boyz Original because it is gluten free.
4 tbsp of pure maple syrup (or less if you prefer less sweet)
3 tbsp of Worcester sauce…I have no clue how to spell that
1 Dried Chipotle Pepper
Pre cook onion, green pepper and beef with the chile powder, then throw it all in a slow cooker with the rest of the ingredients
Cook for 4-6 hours on low in a slow cooker or for 2 hours on low in a big pot. Once the chile is done, take out the Chipotle pepper (unless you like your chile “nitro”)
Enjoy in big bowls !! Add a cut up raw veggie tray and you are ready to watch the game with your family and friends.
