
I love summer and all the delicious vegetables and fruit available to us. Much of the produce available in the summer months are so nutritious that they are labeled “superfoods”. I set out to create a salad that would utilize as many of these “superfoods as possible in one meal. Thus my Superfood Summer Salad was born.
In this Superfood Summer Salad you will find, avocado, almonds, baby spinach, blueberries, garlic & extra virgin olive oil-all superfoods! This salad, with its mouthwatering Lemon Dijon dressing dressing combines sweet & savory in each delectable bite.
The Lemon Dijon Dressing makes enough to 2 salads, unless you like your salad really well dressed. Personally, I prefer dressing to be on the lighter side but everybody’s taste preferences are unique.
This recipe should make enough Superfood Summer Salad for 4 side servings or 2 meal servings. It makes a perfect light lunch on a hot summer afternoon or will shine as a starter salad at your summer barbeque.
Superfood Summer Salad with Lemon Dijon Dressing.

Ingredients
For the Salad
- 8 cups Baby Spinach
- 1 large Avocado, cubed
- 1 cup blueberries, rinsed
- 3 tablespoons almonds, sliced
- 4 tablespoons goat cheese, crumbled
For the Dressing
- 2 tablespoon fresh lemon juice
- 1 teaspoon Dijon mustard
- ½ teaspoon fresh ground black pepper ¼ teaspoon sea salt
- 2 cloves garlic, finely minced
- ¼ cup olive oil

Method
For the Dressing
Whisk together the lemon juice, mustard, pepper, salt & minced garlic in a small bowl.
Slowly add the oil & whisk until you can see it has combined & slightly thickened.
For the Salad
Wash the baby spinach & pat dry. Put in medium sized salad bowl.
Top with diced avocado, blueberries, almonds and goat cheese.
To Serve
Drizzle ½ the Lemon Dijon Dressing & Toss. Add more dressing to the salad if needed.
To Store
Store leftover dressing in an airtight bottle for up to 2 weeks. You will want to use it again, even on a green garden salad.
