
Make up a batch of this tasty vegetarian sauce base and you’ll have most of the prep done for an almost endless array of warm and hearty delicious meals. Italian dishes, Mexican dishes, Greek dishes, French dishes, English dishes . . . whatever your imagination (and a few spices) will create.
For meat lovers you can add in your favourite lean ground meat (beef, chicken or turkey). You can freeze this sauce base so you have it handy for busy week night meals or make up a variety of dishes on a lazy Sunday (or Wednesday) afternoon.
Ingredients
2 large yellow onions (chopped)
1 tbsp chopped garlic
1 green, red and yellow pepper , chopped
2 small or 1 medium zucchini, chopped
2 stalks of celery, chopped
2 cups brown mushrooms, sliced
3 tbsp extra virgin olive oil
Method
Heat olive oil in a large dutch oven. Add chopped Onion and garlic and sauté till they are clear. Add all other ingredients and cook until they are bright in colour. Remove from heat.
That’s it! The rest of the home cooked magic comes when you decide what international dishes you are going to make. My suggestion is that you divide the sauce in two and make 2 totally separate dishes.
