
For Christmas this last year I received a gift of the best tasting Granola I have ever had from one of my LiveWell Coaches, Michelle. I have been enjoying it post Christmas for 2 weeks now on plain organic or Greek yogurt paired with either ½ a chopped apple or blueberries. (This is my “go to” power breakfast, along with my fave vitamin pack, EFAs and probiotic, when I want a change from my Metabolic Miracle Smoothie breakfasts. )
Honestly, knowing Michelle, I knew this granola was going to be super good for me as well as delicious so I asked if I could share her private recipe with my readers.
If you are removing Gluten from your list of foods then choose Gluten Free Oats instead of regular Steele cut oats.
Okay, here comes the recipe!
Winter Granola 
Ingredients
3 c. oats, steel cut (gluten free oats optional)
1 ½ cups sliced almonds
½ cup pumpkin seeds
½ cup quinoa
1 Tbsp vanilla
¼ cup coconut oil, melted
¼-cup pure maple syrup (use 1/3 if you like it a bit sweeter)
½ cup dried cranberries
¼ cup dried blueberries
Method
*Preheat oven to 250 degrees
Combine all ingredients except the dried fruit and spread evenly on a cookie sheet lined with parchment paper. Bake for 1 hour, stirring every 15 minutes. Remove from oven and let cool. Stir in dried fruit.
Store in an airtight container.
