
Are you looking for a delicious dish to bring to a summer appie party or barbeque? My Zesty Hummus recipe will give you lots of fabulous party options.
I am attending one of my LiveWell Consultant’s birthday party on Sunday and have decided to going to bring this fabulous Zesty Hummus which is full of protein, fiber and the good fats we need. The other great thing about making your own hummus is that it is preservative free, unlike what you buy in the grocery store. If you would like to kick it up in the spice department, I’ve given you an option that is HOT!
Zesty Hummus
INGREDIENTS
- 1 15-ounce can organic garbanzo beans, rinsed and drained
- 3 large cloves garlic, slivered in a garlic press
- 2 tablespoons tahini
- 2 tablespoons extra virgin olive oil
- 1/4 cup water
- 1 teaspoon ground cumin
- 1 tsp Tabasco (or other kickin’ red hot sauce)-OPTIONAL
- 1/2 teaspoon sea salt
- Fresh black pepper to taste
- Chopped tomatoes, cilantro and green onions make a nice garnish
METHOD
Add the crushed garlic and the garbanzo beans to a blender or food processor bowl, and pulse until roughly chopped. Add the tahini, olive oil, water, cumin, sea salt, pepper and hot sauce (optional), and blend or process until smooth, scraping down the sides of the blender or bowl as needed with a rubber spatula. If the hummus is too thick, add a bit more water and re blend until the hummus is as creamy as you would like it.
TO SERVE
Put hummus to a pretty serving bowl and garnish with chopped tomatoes, cilantro and chopped green onions or cucumber. Serve with fresh veggies, gluten free chips (my favourites are “Food should taste Good Multigrain”) , or oven baked pita chips.
