This recipe is super delicious and creamy but you will never experience the typical bloating or sluggishness after eating regular pasta. The carbohydrate and calorie count of zucchini pasta is minimal so it is perfect if you are choosing a low glycemic, Keto or Paleo eating plan. This recipe is a Winner!
If you are short on time you can now purchase zucchini noodles from most grocery stores but if you have a few minutes it is way less expensive to spiralize your own noodles from 2 medium to large zucchinis.

Creamy Zucchini Pasta Carbonara
INGREDIENTS
For the Pasta
2 large Zucchini, spiralized
1 Tbsp olive oil
For the Sauce:
2 ripe avocados
1 cup fresh basil leaves
3 cloves garlic, minced
2 Tbsp lemon juice
½ tsp. Himalayan sea salt
¼ cup Extra Virgin olive oil
¼ cup pine nuts(for the topping)
Method
Either purchase pre packaged zucchini noodles or spiralize your own.
Set aside while making sauce.
In a blender or food processor combine all sauce ingredients except pine nuts. Once sauce ingredients are blended and creamy simply sauté zucchini pasta for 2-3 minutes in olive oil until slightly softened and bright green in colour.
Put cooked zucchini pasta in a large bowl and add the blended sauce. Toss until well combined then pile on warm plates and sprinkle on the pine nuts.
