If you are short on time you can now purchase zucchini noodles from most grocery stores but if you have a few minutes it is way less expensive to spiralize your own noodles from 2 medium to large zucchinis.
I have purchased and tried a number of spiralizers over the last few years and one of my favourites is the Unmengii DIY Green Gadgets Kitchen Tools Fruit Spiral Slicer Spaghetti Pasta Julienne Carrot Slicer Vegetable Spiralizer HandHeld Spiral Grater
It is reasonably priced, easy to clean and has enough blade variety to make your creations fun.
Creamy Zucchini Pasta Carbonara
For the Pasta
2 large Zucchini, spiralized
1 Tbsp olive oil
For the Sauce:
2 ripe avocados
1 cup fresh basil leaves
3 cloves garlic, minced
2 Tbsp lemon juice
½ tsp. Himalayan sea salt
¼ cup Extra Virgin olive oil
¼ cup pine nuts(for the topping)
Either purchase pre packaged zucchini noodles or spiralize your own.
Set aside while making sauce.
In a blender or food processor combine all sauce ingredients except pine nuts. Once sauce ingredients are blended and creamy simply sauté zucchini pasta for 2-3 minutes in olive oil until slightly softened and bright green in colour.
Put cooked zucchini pasta in a large bowl and add the blended sauce. Toss until well combined then pile on warm plates and sprinkle on the pine nuts.
Enjoy! It’s that simple!
